What Goes Into a Low Country Boil?
Traditionally, a low country boil consists of shrimp, corn, potatoes, and sausage, cooked together in one big—we mean huge—pot. A low country boil is not typically a small indoor meal, but rather one cooked in volume and meant to feed a hungry crew.
Besides shrimp (crab, crawfish, or another shelled fish), use baby red potatoes, smoked sausage, and cut-up sections of corn on the cob.

Add in sausage and, if desired, onions, and after a boil is reached again, cook for 15 minutes. Corn goes in at this point, and the water is again brought to a boil. Cook for 10 minutes (or until potatoes are done), then add the shrimp. If you didn’t boil the shrimp before, cook for about three minutes until the shrimp is pink.
Serving on newspaper in the center of the table is common to soak up the brine. Then, the family takes as much as they want. Voila! You have a meal that, despite its volume, is usually devoured by a family or group of friends—no leftovers!

For a seven-gallon or 29-quart pot, you would use four pounds of medium red potatoes, four pounds of peel-and-eat shrimp, eight ears of corn cut in half, two or three peeled sweet onions (quartered unless they’re small), and two-and-a-half pounds of smoked pork sausage cut into three-inch pieces. If you add or replace shrimp with crawfish, make it about 15 pounds of frozen or live fish. You could also add four pounds of frozen crab legs if desired.
With all those tasty and diverse ingredients cooked together, a low country boil is fine all by itself, but if you’re feeding a crowd or want side dishes, some choose sourdough bread, a green salad, or coleslaw to accompany this meal.
